Usually black rice is used to make porridge and steam rice; Today, change the method: combine it with pumpkin and then mix it with red dates, raisins and brown sugar to make black rice buns to eat, all independent, and it is more convenient to eat and take at any time! Let's share my practice:
1. Peel, seed, slice and steam the pumpkin; Pour into a basin and press into puree.
2. Wait for the pumpkin puree to dry until warm, add 3 grams of yeast, a small spoon of sugar (to promote fermentation), about 300 grams of flour and form a dough with moderate softness and hardness (if the noodles are too dry, you can add a little warm water).
Rub a little oil on the surface, cover and let rise until twice the size.
3. Wash the black rice, put it in the pressure cooker, put in the water that is one knuckle higher than the black rice, and cook the rice button.
[If you have enough time, you can also soak the black rice for two hours in advance, and put less water when the soaked rice is cooked]
Add chopped red dates, raisins, and brown sugar to the boiled black rice and stir well.
4. Take out the proofed dough and knead the dough on the cutting board to exhaust.
Fill, roll, fill, seal down, and then arrange each into a circle.
Cover with plastic wrap and let rise for 20 minutes (depending on room temperature).
5. Grease the steamer drawer and cook it on cold water.
The pot was boiled and steamed, and steamed for 12 minutes; Remove from heat and simmer for another 3 minutes; Remove from the pan with a lid open.
