Ingredients: 1 bowl of rice, 3~5 pieces of braised pork, 3~5 capers, 3 slices of carrot kimchi, 1 slice of shallot, 1 slice of pickled ginger, 3 cloves of garlic, 2 spicy millet (optional), a little salt, 1.5 tablespoons of fresh soy sauce, a little sugar, a little black pepper
1. We prepare the required ingredients first, a bowl of leftover rice, three or five pieces of braised pork, a few capers, carrot pickles and pickled ginger, three cloves of garlic, if you like spicy food, you can put 2 millet spicy, and if you don't have pickled ginger and carrot pickles, you can replace them with fresh carrots and ginger

Then make further preparations, first cut the braised pork into small cubes (the braised pork I use is made by myself, and it is refrigerated in the refrigerator in advance until the meat is a little firm, so that the braised pork will not be fried until it melts when stir-frying); Capers and carrot pickles are cut into small pieces, shallots are minced, pickled ginger is minceed, garlic is mince, millet spicy is mince, and those who don't eat spicy can ignore millet spicy
3. Then light the fire, put oil in the pot after the pot is hot, then put the garlic and pickled ginger into the pot, and stir-fry over medium heat to bring out the fragrance
4. Then put the diced shallots into the pot and continue to stir-fry evenly until the diced shallots are fragrant and transparent .
5. Then put in capers and carrot kimchi, because capers contain a lot of water, so you should stir-fry over medium heat for a while, and slowly fry the water in the capers, otherwise the fried rice will have the taste after soaking in water
6. We fry the water of the capers and then put in the braised pork, and simply stir-fry, because the braised pork itself is very soft and rotten, and after a long time, it will turn into a meat puree and blend with the vegetables and rice, so that the original taste of the braised pork will be lost
7. Then take the leftover rice out of the refrigerator and put it in the pot, turn to medium-low heat and stir-fry the rice first, and stir-fry evenly with braised pork, capers and other side dishes
8. Then add an appropriate amount of fresh soy sauce, a little black pepper, a little salt, and a drop of white sugar according to your own taste, stir-fry evenly, the role of white sugar is only to improve freshness, so you can throw it away
9. When the seasoning is stir-fried evenly with rice and side dishes, then put in millet spicy, stir-fry evenly to get out of the pot and put it on the plate, and if you can't eat spicy, you can not put millet spicy

Tips:
1. The capers in the ingredients are made by myself, and the taste is relatively light, if you buy capers, you should adjust the amount of salt and other seasonings appropriately according to its saltiness.
2. After adding the braised pork, it should be stir-fried quickly, and the braised pork will be fried after a long time, so that the taste of the braised pork will be lost.
3. If you can't eat spicy, ignore millet spicy.
