In my house, one of the must-make kimchi every autumn is pickled radish strips, because autumn is the season when white radish is on the market, and the white radish at this time is crisp and delicious, with a hint of sweetness, and it is the best to make kimchi.
【Pickled radish strips】
Ingredients required: 950 grams of white radish, 50 grams of millet spicy, 8 cloves of garlic, 38 grams of salt, 320 grams of water, 186 grams of rice vinegar, 18 grams of sugar
1. Wash the white radish and cut off the roots, then cut it into strips about 1cm wide, and pour it into a large pot, where the radish does not need to be peeled
2. Add 38 grams of salt to the white radish pot, wear disposable gloves and mix evenly, cover with plastic wrap, and marinate for 1 hour
3. During the pickling of white radish, to process other ingredients, wash the millet spicy and cut it into chili rings, peel the garlic and cut it into slices.
4. Then adjust the vinegar water for pickling radish strips, pour 320 grams of water, 186 grams of rice vinegar and 18 grams of sugar into the pot, boil on high heat until boiling, turn off the heat and let cool. Here you should buy light rice vinegar for rice vinegar, don't buy it black, and you can also use white vinegar instead
5. There will be a lot of water out of the pickled radish strips, as shown in the figure below, and all the pickled water needs to be poured out
6. Then pour the millet spicy and garlic slices into the radish strip basin, wear disposable gloves and mix evenly
7. Pour the radish strips into the sealed jar prepared in advance, and finally pour in the cold vinegar water, cover the lid, refrigerate and soak overnight, and then you can eat
8. This kimchi, which my family must make every autumn, is sour, spicy, crispy, appetizing and greasy, and the method is so simple
Tips:
1. The caster sugar in the formula plays a role in improving freshness, and the finished product cannot be sweetened, so you can add caster sugar with confidence
2. Friends who can't eat too spicy can reduce the amount of millet spicy
