 Shredded tofu

Ingredients: 300 grams of old tofu, half a red pepper, half a green pepper, 3 cloves of garlic, an appropriate amount of green onions, 2 coriander, 2 dried chili peppers or millet spicy (optional), 10 Sichuan peppercorns, 1 tablespoon of Yipinxian soy sauce, 0.5 tablespoons of oyster sauce, an appropriate amount of salt, a little sugar, an appropriate amount of white vinegar or aged vinegar, and an appropriate amount of sesame oil


1. We first prepare the required ingredients, tofu should be old tofu, not tender tofu; If you can't eat spicy, you can use large chili peppers, and red chili peppers can be used for color matching, and you can leave them out if you don't have them; If you can eat spicy, you can put a few more millet spicy or dried chili peppers; Green onions and garlic are used to enhance the flavor and should not be ignored; Prepare the other seasonings and you're good to go


2. Make other preparations, first cut the old tofu into 0.5 cm thick slices, then wash the red and green peppers and cut them into shreds; mince the garlic; Cut the green onion into shreds, cut the millet spicy into small pieces and put them together with the peppercorns, and cut the coriander into sections after washing

4. Leave an appropriate amount of base oil in the pot, add the tofu slices and turn to medium-low heat to fry


5. Fry until the tofu slices are golden brown on both sides, then remove and set aside

After the fried tofu slices are cooled, they are then cut into thin strips, I usually cut the fried tofu slices in half and then cut them, so that the shredded tofu has a fried burnt fragrance on one side, and the tofu is tender on the other side, and the taste is very rich; Then put the chopped red and green peppers, green onions, garlic and coriander into a large bowl

Tips

1. Be sure to choose old tofu, tender tofu has too much moisture and is not suitable for making this cold dish.

2. If you can't eat spicy, you can not add millet spicy or dried chili, and red and green chili peppers can also be replaced with persimmon peppers.

3. When frying tofu, use medium-low heat to fry slowly, be careful not to fry the paste.
