Jiang rice noodles are delicious and have a knack, and they are crunchy and fragrant when you take a bite, which is much more delicious than buying


What I share with you today is the practice of Jiangmi noodles. I remember that I was able to eat it during the Chinese New Year when I was a child, it was sweet on the outside and crispy on the inside, and now I still drool when I talk about it!  

First of all, prepare: 160 grams of glutinous rice flour, 55 grams of plain flour, 1 egg, 20 ml of water, 1 egg yolk, 70 grams of sugar, 50 ml of warm water.

The first step is to pour glutinous rice flour and ordinary flour into a large bowl, knock in eggs, pour in water, stir well, add an egg yolk, crush it, and press it together while kneading the noodles, this noodles are relatively hard, not easy to knead, knead for a while, form a dough, cover the lid and let it sit for fifteen minutes.

In the second step, sprinkle a layer of dry flour on the panel, knead the dough on it, roll it into a thin round cake with a rolling pin, cut it into long strips three centimeters wide with a knife, and then cut into small strips as thick as chopsticks, and knead it slightly with your hands.

The third step, pour an appropriate amount of cooking oil into the pot, put the kneaded Jiang rice noodles in the oil pot (be sure to cool the oil in the pot), fry slowly over low heat, turn a few times with chopsticks, don't stick to the pan, fry until they are floating on the oil surface, and the color becomes golden and you can take out the oil.

The fourth step is to prepare another pot, pour sugar and warm water into the pot, boil slowly over low heat, the sugar melts, and a uniform bubble appears, put the fried Jiangmi noodles in it, stir evenly, turn off the fire, and keep stirring and beating with a shovel to make each Jiangmi noodles covered with frosting, and you can eat it after cooling.

The Jiangmi noodles made in this way are crispy and sweet, not greasy, and very delicious, as long as you follow my practice and proportions, you can easily make delicious Jiangmi noodles, if you like it, try to make it, and see if there is the kind of taste we had when we were children.
