【Steps】

3. Knead your hands into a ball, it doesn't matter if the light is not smooth. Cover and begin fermentation until twice the size.
4. Peel the yam, cut it into thin slices and steam it for 15 minutes. If you are allergic to yam skin, remember to wear gloves.
5. Clean a handful of red dates, remove the pits, chop them and set aside.
6. Mash the steamed yam into a puree and press it delicately, so that it tastes better.
7. Put the mashed yam and red dates together, and add an appropriate amount of honey to taste. If you like it to be sweeter, add more.
8. The fermented dough becomes larger and full of honeycombs inside.
9. Sprinkle some dry flour on the cutting board, move the dough over and knead to exhaust.
10. After exhausting, knead smooth, then knead into long strips, and divide into 16 dough mixtures of equal size. The size is as you like.
11. Take a small portion of dough, fold it inside, knead it, and turn it over to make it round.
12. The yam and red date filling is also divided into 16 parts, and the filling is as many parts as there are parts of the dough. Flatten the dough slightly with your hands and add a filling. Close the mouth with the tiger's mouth.
13. Pinch the mouth tightly, close the mouth down, and press it into a round cake shape with your hand.
14. After everything is done, put it on the board, cover the surface with a fresh-keeping bag, and let it ferment for 15 minutes.
15. Brush the frying pan or electric baking pan with some oil and put in the green billet. The whole process starts to burn on low heat.
16. Boil the bottom surface to set and change color, turn it over, and continue to burn it on low heat.
17. Turn it over many times, and if the fire is too big, you should turn it over frequently.
18. Sear until golden brown on both sides, press the cake dough and it will quickly rebound to get out of the pan.
Tips:
1. When the weather is cold, you can put it in warm water when fermenting, so that the fermentation will be faster.
