Pickled cucumber "2 don't put 1 don't pour", sour and spicy crisp, appetizing and satisfying, necessary for the New Year


Today I will share with you the new method of pickling cucumbers, no star anise, no peppercorns, no hot oil, easy to learn 

【Ingredients】

3 cucumbers, appropriate amount of millet spicy, appropriate amount of garlic, appropriate amount of rock sugar

Salt to taste, 1 tablespoon light soy sauce, 1 tablespoon of aged vinegar, 1 tablespoon of white vinegar

【Directions】

Step 1: Wash the cucumber with salt, scrape the thorns of the cucumber skin with a paring knife, and wash it with salt to better remove the pesticide residue on the cucumber skin.


Step 2: Cut the cucumber into thin strips, remove the pulp and keep the pulp to affect the taste.                             


Step 3: After cutting, put it in a larger container and marinate it with an appropriate amount of salt for an hour.


Step 4: After marinating for an hour, take out the cucumber strips and wash them in clean water, wash the cucumbers a few more times so that they will not be too salty.


Step 5: After cleaning, squeeze out the water and put it in a large bowl, add garlic slices and millet spicy, add a spoonful of aged vinegar, and stir well with a spoonful of white vinegar.


Step 6: Put it into a waterless and oil-free sealed jar and add an appropriate amount of rock sugar to marinate for 5 hours.


The cucumber that has been marinated for 5 hours can be eaten, sour, hot and crisp, with rice, noodles, and steamed buns, which is appetizing and satisfying, and is a must-have for the New Year.


【Tips】

(1) If you want to eat sour points, you can add aged vinegar and white vinegar appropriately.

(2) The sealed jar of cucumber must ensure that it is waterless and oil-free, so that the cucumber can be stored longer.
