After kneading evenly, cover and marinate for about 3 days, remember to turn it several times during this period.
After three days, the marinated meat is taken out, strung with strings and hung in a ventilated place, and air-dried for 5-7 days.
I hung it on the north balcony and dried it for 7 days, this time is not fixed, mainly depending on the state, if the surface is dry to the touch, but the meat is still a little elastic when pressed.
It's been 7 days and the surface is already dry, no need to dry it anymore, take them off.
Look at the cut side of the meat, the lean part is dark red, so it's okay.
Take out a piece today and taste it, wash it several times with warm water before eating, then put it in a steamer and steam it for about 25 minutes, and cut it into slices after steaming.
