Steps:
1. First of all, here is an introduction to the classification of tofu, which is mainly divided into southern tofu and northern tofu.
Southern tofu, also known as tender tofu, has a large water content of about 90~92%; Also known as gypsum tofu, the molding agent it uses is gypsum liquid, which is characterized by a relatively soft and delicate texture.
Northern tofu, also known as old tofu, has a water content of about 85%. Also known as brine tofu, as the name suggests, its molding agent is brine, which is firmer, dry and harder than southern tofu. ”
For today's dish, we chose tender tofu, which is southern tofu. First we prepare two pieces of soft tofu, drain the tofu, and then change the knife and cut it into thick slices of about one centimeter.
2. Prepare a clean empty bowl, beat two eggs into the bowl, stir into the egg liquid with chopsticks, then put the cut tofu slices into the egg liquid, and shake the bowl to evenly coat each slice of tofu with a layer of egg liquid.
3. Ignition the pot, add a little base oil to the pot, after the oil is hot, put the tofu dipped in egg liquid into the pot neatly one by one, and fry it over low heat.
4. Don't be in a hurry to turn the tofu after it is put into the pot, otherwise it will be easy to break, wait for a minute, fry until it is set, and then turn it over and fry the other side.
5. Pay attention to frying over low heat throughout the whole process, otherwise it will be very easy to fry, turn black and mushy, fry golden on both sides, and put the tofu out for later use.
6. Prepare the material head, wash the green and red peppers and remove the seeds, and change the knife to cut into hob pieces; Peel off the outer layer of the onion and cut it into larger cubes. Wash the shallots and chop them into minced shallots; Pat the garlic with a knife so that you can quickly peel it, then cut it into minced garlic for later use.
7. Start the pot and light the fire, add a little base oil to the wok, after the oil is hot, put in the cut ingredients, diced onion and minced garlic over low heat until fragrant, then put in the fried tofu, and then start seasoning, a little salt, chicken essence, sugar, appropriate amount of light soy sauce, oyster sauce, and then add half a spoon of water along the edge of the pot, turn on high heat and shake the wok, so that the tofu can quickly absorb the soup and taste.
8. Cook until the soup is thick, in order to prevent the tofu from hanging up the soup, we use wet starch to hook a little thickening, and finally add the cut green and red pepper pieces to enhance the flavor and fragrance.
