1. The small fish I bought back, the merchants helped me deal with the same, I only need to clean it a little when I come back, and then clean and drain the water. Add an appropriate amount of shredded ginger and green onions to the small fish, add an appropriate amount of salt, cooking wine, light soy sauce, dark soy sauce, thirteen spices, mix well and marinate for 30 minutes to taste.

2. Beat two eggs into the bowl, add 3 teaspoons of cornstarch, add a spoonful of cooking oil, stir well, you can draw the silk, and you don't need to add water and flour in this process.

3. Put the marinated small fish into the paste so that each small fish is coated with a layer of paste.

4. Heat the oil until it is hot, turn down the heat to medium-low, fry the small fish slowly, turn over the small fish many times in the middle of the way, make it evenly heated, fry until golden brown on both sides, and take it out for later use.

5. Turn on the fire again, the oil is burned to 60% hot, turn down the heat, put in the small fish and fry for a while, so that the fish meat tastes more crispy, turn off the heat and fry for 2 minutes, so that the bones can be chewed and eaten.

6. Then remove the oil control, put it on a plate and start eating.
