2. Ignite the pot, add an appropriate amount of base oil to the pot, then add rock sugar, and slowly fry the sugar over low heat

Put the drained pork ribs into the pot, stir-fry until evenly coated with a layer of sugar, then add an appropriate amount of cooking wine, dried chili peppers and garlic cloves (if you can eat spicy, you can cut the dried chili peppers into shreds first and then put them in), stir-fry until the garlic is fragrant
4. Then add the bean paste, a little dark soy sauce, and 2 tablespoons of fresh soy sauce and stir-fry evenly
5, then add boiling water, the amount of water should not be over the ribs, turn to medium and low heat after boiling and slowly stew, you can also transfer the ribs in the wok to the pressure cooker and stew for about 20 minutes, my habit is to transfer the ribs to the cast iron pot after the water in the wok is boiled, the ribs stewed in the cast iron pot are firmer in taste than those stewed in the pressure cooker, but the relative stewing time will be longer, about 40 minutes, and the ribs can be pierced with chopsticks
6. Simmer the pork ribs until they can be pierced with chopsticks, then add the beans and potatoes, and continue to simmer until the beans become soft, about 10~15 minutes
7. The stewed beans with fragrant pork ribs are ready, sprinkle an appropriate amount of coriander or chopped green onion before coming out of the pot
