【Fresh meat wonton soup】

Ingredients: 500g pork, shallots, Sichuan pepper, ginger, salt, chicken essence, light soy sauce, shrimp skin, seaweed, coriander, sesame oil, white pepper.

Steps:

1. Peel the pork and cut it into small pieces, then chop it into minced meat, put it in a basin, add 5 grams of edible salt and stir well. To make wonton filling, it is best to choose three fat and seven thin front leg meat or plum blossom meat, these two parts of the meat are delicate and tender, which is more suitable for filling.

2. Prepare 20 grams of shallots cut into segments, 10 grams of ginger cut into shreds, 3 grams of peppercorns into a bowl together, then add 150 grams of boiling water to soak, cool the water and set aside.

3. Beat the cooled green onion and ginger water into the meat filling three times, and stir in one direction after adding the green onion and ginger water each time, so that the meat filling can completely absorb the water into it, which is the key to the wonton filling being tender and delicious.

4. After the meat filling is filled with water, add 5 grams of light soy sauce, 3 grams of chicken essence, and 2 grams of white pepper to taste, add an appropriate amount of chopped green onions, continue to stir in one direction, stir the seasoning evenly, add an appropriate amount of sesame oil and mix well, and the wonton filling will be adjusted.

5. Take an appropriate amount of wonton wrappers and wrap all the meat filling into the wontons, there are many ways to wrap wontons, and the easiest way is to close the wontons together, as long as the filling is not exposed.

6. Write down the soup base and add seaweed, shrimp skin, chopped green onion, coriander, salt, white pepper, chicken essence, light soy sauce and sesame oil to the bowl.

7. After the water in the pot is boiled, put in the wontons, add a bowl of cold water after boiling, and remove it after boiling again.

8. Scoop a spoonful of the original soup of the boiled wontons into a bowl, then add the cooked wontons, stir well and serve.
