Scrambled eggs with fungus radish

Ingredients: dozens of fungus, 3 eggs, half a carrot, 3 cloves of garlic, and a few garlic sprouts

Step 1: Beat three eggs into a bowl, add some salt and stir to mix, pour oil into the pan, and when the oil is hot, scramble the eggs and put them out.

Step 2: The fungus needs to be soaked in advance, prepare a basin of cold water, and put the fungus. The fungus is generally soaked for 20 minutes in summer, and it takes about half an hour in winter. Pay attention to the fungus should not be soaked for too long, it is easy to cause rot, breed bacteria, and will be poisoned if eaten. In particular, don't eat the fungus overnight. Remove the roots of the fungus, clean it, peel and cut the carrots into slices for later use.

Step 3: Prepare a bowl of water starch, add 4 tablespoons of starch and 4 tablespoons of water and stir well. Heat the oil and stir-fry the minced garlic until fragrant.

Step 4: Add the carrot slices and stir-fry until soft, then add the fungus and stir-fry, and finally pour in the eggs. Because carrots are difficult to cook, they are first put into the pot and stir-fried, and if you put the fungus directly, the surface of the fungus will be stained with water, and the pot will crackle, so it is recommended that you follow this step to stir-fry.

Step 5: Pour in the water starch to thicken, add a small spoon of salt to taste, and finally add the garlic sprouts and stir-fry well, then you can get out of the pot. Add some garlic sprouts and the whole dish will taste even more delicious.

This scrambled egg dish with fungus and carrot is ready, and the combination of the three ingredients is very good, and it is very appetizing just by looking at it. After the water starch is thickened, the taste is richer. With this dish on my table, my child can eat an extra bowl of rice.

Of course, you can also add some cucumbers according to personal preference, and if you like to eat chili peppers, put some sharp peppers or dried chili peppers to taste. However, it is not recommended to put oyster sauce on the table, as it is easy to mask the original taste of the ingredients, so you can simply season it with salt.
