Ingredients: 1000g beef brisket, 500g potatoes, star anise, dried chili, green onion, ginger, salt, light soy sauce, dark soy sauce, dried hawthorn.

Steps:

1. Cut the brisket meat into small pieces of about 1.5 cm, soak it in water for 1 hour, and soak the excess blood in the brisket, which can effectively remove the fishy smell of the brisket and make the brisket easier to taste during the re-stewing process.

2. Add water to the pot, blanch the beef brisket soaked in blood water in a pot under cold water, add cooking wine to remove the smell after boiling, skim off the foam, and cook for 3 minutes before removing it.

3. This is a key point, remember not to rinse the beef brisket with cold water after it is fished out, but to rinse the beef with warm or hot water, washing the meat with cold water will cause the meat to be tight and firewood, and it is not easy to stew; Drain the washed beef and set aside.

4. After the oil in the wok is hot, add the green onions, ginger slices, dried chili peppers, star anise and stir-fry until fragrant, then add the beef brisket and stir-fry for about 1 minute, and fry the surface of the beef brisket until it is slightly yellow.

5. Then it is a key point, add an appropriate amount of boiling water, remember to add boiling water, add cold water, the beef brisket meat is not easy to stew, and it will cause the meat to be tight.

6. Do not add salt to taste after boiling, cover and turn to medium heat and simmer for 40 minutes; When stewing the brisket, remember to wait for the brisket to simmer until it is medium-rare before adding salt, as adding salt too early will also cause the brisket to be less soft and hard.

7. Simmer the beef brisket until it is medium-cooked, add an appropriate amount of salt, light soy sauce to taste, an appropriate amount of dark soy sauce to taste, add some potato pieces, simmer for about 15 minutes, and simmer the potatoes and beef brisket until they are flavorful. Half of the stewed brisket can be taken out and frozen in the refrigerator, which can save a lot of time when you eat it next time.

8. Finally, turn on the high heat and collect the soup in the pot a little, and collect it slightly viscous, so that the bibimbap will be more fragrant.
