Steps:
Step 1: Wash the pork belly and cut it into thin slices for later use.
Step 2: Cut the onion into cubes and set aside a few slices of ginger.
Step 3: Cut the potatoes into slices and soak them in water for a while to prevent oxidation.
Step 4: Blanch the potatoes with salt for 1 to 2 minutes, drain and set aside.
Step 5: Heat the pan with cold oil and stir the ginger slices until fragrant.
Step 6: Put the pork belly in the stir-fry until golden brown and the excess fat is released.
