  Tender and delicious chicken with sauce

Ingredients: 1 chicken thigh, 1 cucumber, 1 shallot, 2 slices of ginger, 1 tablespoon of bean paste, a little salt, 2 tablespoons of Yipinxian soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of cooking wine, a little sugar, a little dark soy sauce (optional), an appropriate amount of pepper, a little cornstarch


1. First of all, prepare the ingredients, the chicken thigh meat is relatively tender, but it needs to be boneless, and you can replace it with chicken breast if you feel troublesome, but there will be a slight difference in the taste of the meat; I only used cucumbers for the side dishes, but I can also add an appropriate amount of carrots 

 2. Wash the chicken thighs, cut the chicken skin along the thigh bone, and tear it down gently, if you don't mind eating the chicken skin, you can also not tear it off, and then remove                      the thigh meat along the bone


3. Rinse the chicken thighs and cut them into small cubes, add ginger slices, cooking wine and an appropriate amount of pepper to grasp and mix evenly, so that the cooking wine and meat are completely integrated, so that the smell can be better removed


4. Then add 1 tablespoon of fresh soy sauce, a little salt and a little cornstarch, and mix well again


5. Grasp the seasoning and diced chicken evenly and set aside to marinate for a while, so as to add a little base flavor to the diced chicken and make it more tender and smooth .


6. While the diced chicken is marinating, we wash the cucumbers and shallots, and then cut them into small dices and put them on a plate for later use 


7. Mix another sauce, add 1 tablespoon of bean paste, 1 tablespoon of Yipin fresh soy sauce, 1 tablespoon of oyster sauce, a little sugar and 2 tablespoons of water to a small bowl and stir well. 


8. Add an appropriate amount of corn oil to the pot, take out the ginger slices in the diced chicken, and then put it into the pot and stir-fry quickly, about 45 seconds, that is, the diced chicken changes color and then put it out for later use 


9. Then put the diced cucumber and shallots into the pot and stir-fry a few times 


10. Then put the diced chicken that has just been fried into the pot, then add the sauce that has been adjusted before, and stir-fry quickly and evenly 


 The diced chicken is not only tender and delicious, but also full of flavor in the sauce, and with the addition of diced cucumber, it is more fresh and refreshing 


Tips:

1. Chicken thighs can be replaced with chicken breasts, but the taste is still more tender.

2. If you like spicy food, you can replace the bean paste with hot sauce or add an appropriate amount of dried chili peppers to enhance the taste.
