200 grams of cake flour, 100 grams of butter, 60 grams of caster sugar, 2 eggs (100 grams), 8 grams of baking powder, 1 gram of baking soda, 2 grams of salt, 200 grams of ripe banana pulp
Note: For this kind of butter cake, baking powder should not be omitted, it is a key element of fluffiness, don't tell me that baking powder is unhealthy or anything else.
Make:
1. Remove the butter from the refrigerator in advance and soften it thoroughly, so that it will be easy and quick to whip. If the butter is too hard and you want to whip it quickly, it is not right to heat it in an insulated heat or microwave oven a little.
100 grams of butter, add 60 grams of caster sugar, don't start the whisk first, manually prick it up and down a few times to let the butter and sugar stick together, and then turn on the whisk to beat, so that it will not splash.
Start at low speed, then use high again, again to prevent splashing.
Whip until the butter becomes significantly larger and has a fluffy and light texture, like a feather.
2. Crack two eggs into a small bowl and beat it apart. You can't beat the eggs directly into the butter, it is impossible to blend them together, and there will be serious oil-water separation.
Add the egg liquid to the butter 3-5 times, each time you must beat it thoroughly with a whisk and then add the next time, don't be in a hurry, you must do this to avoid the separation of the oil eggs.
The resulting butter custard should be very delicate and fluffy. Eggs, about 100 grams of shelled, if they are too big, they can't all be put into butter, if you add more, there is a little oil-water separation, you can add a little more butter to make up for it.
3. Bananas should be ripe through, remove the banana peel about 200 grams, press it with a fork, there are a small number of particles It doesn't matter, the taste will be better.
Bananas are easy to oxidize and turn black, so you have to wait until you need to add bananas to this step, which I also know after doing it.
4. Add the mashed banana to the butter, you don't need to mix thoroughly, just stir a few times with a spatula.
Then sift in the powder: flour, baking powder, baking soda and salt, stir well, do not stir too much, as long as there is no white powder.
5. Then pour the mixed batter into the bread mold and gently shake the mold a few times to make it flat.
It is best to pad a piece of oiled paper in the mold, so that it is more convenient to remove the mold. If there is no oiled paper, and the mold is not anti-stick, then evenly smear some oil on the five sides of the mold, and then sprinkle some dry powder to shake off.
6. The oven should be preheated in advance and the heat should be 180 degrees Celsius.
After preheating, the mold with the cake batter is sent to the oven, and the baking tray is placed in the middle and lower position so that the mold can be roughly in the center of the inside of the oven.
Bake for about 35 minutes, until the cake is bulging and the surface is golden brown, if you are unsure, you can insert a small stick into the middle of the cake and there is no sticky material to bring it out, which means it is baked.
The cake is demolded immediately after baking and placed on a cooling rack to dissipate heat.
7. Wait until the cake is completely cooled before slicing, and use a serrated knife to cut it, the usual knife will cut it apart.
