Preparation:
Wash the bean sprouts, remove the eel shreds, wash them, slice the ginger, shred the onion, and shred the green and red peppers for later use.
Pour oil into the pot, add green and red peppers and stir-fry, add bean sprouts and fry until eight ripe, put an appropriate amount of salt, and set aside.
Pour water into the pot, and after the water boils, blanch the shredded eel cut into inches for one minute.
Pour oil into a pan, add ginger and onion and stir-fry until fragrant, then pour in shredded eel and stir-fry.
Put light soy sauce, dark soy sauce, salt and sugar to taste, add a small half bowl of water and simmer for one minute.
Pour in the freshly fried bean sprouts and stir-fry.
Add another spoonful of ground black pepper, stir-fry to taste and serve.
Tips:
1The eel shall eat the living, and the dead shall not eat.
2. Blanch the shredded eel before stir-frying.
3. Fried bean sprouts cannot be fried at one time, as long as they are fried until they are medium-cooked.
4. Be sure to put black pepper before stir-frying the eel in the pot at the end, which plays the role of the finishing touch.
