【Beer Chicken】

Materials Required:

Half an old hen, 2 green peppers, 1 potato, 6 cloves of garlic, a small piece of ginger, 2 star anise, 2 bay leaves, 3 chives, 1 bottle of beer (my bottle of beer is 330ml), 3 spoons of light soy sauce, 1 spoon of dark soy sauce, appropriate amount of salt, appropriate amount of black pepper

1. First deal with the ingredients, wash the old hen and cut it into pieces, the old hen usually has more chicken fat, I suggest that you do not remove the chicken fat, leave a small part down, so that the fried finished product will be more fragrant. Then cut the peeled potatoes and green peppers into cubes with a hob, peel and slice the ginger, wash and cut the chives, soak the star anise and bay leaves in warm water, and peel the garlic


2. Pour an appropriate amount of oil into the pot, after the oil temperature is heated, put the garlic, ginger slices, chives, star anise and bay leaves in the pot first, and fry the fragrance over medium heat


3. Then put the chicken pieces in the pot, turn to high heat and start stir-frying, until the chicken pieces are slightly browned on both sides. Some people may say "the chicken is not blanched, and there will be no fishy smell when fried", my roast chicken never likes to blanch, I prefer to use soaking to remove the smell of chicken, that is, before the chicken is burned, it will be soaked for 1 hour, so that the excess blood in the chicken can be removed, and the way of soaking to remove the smell can maintain the deliciousness of the chicken more than blanching


4. Then we pour in the potatoes, then add light soy sauce, dark soy sauce, salt and black pepper, and stir-fry until the color is even


5. Then pour in 1 bottle of beer, cover the lid, bring to a boil over high heat, then turn to low heat and simmer for 20 minutes


6. After 20 minutes, pour in the green pepper cubes, stir-fry over high heat until the soup is thick, sprinkle with some black pepper, and you can get out of the pot


7. This dish, whether it is hot or cold, is often made in my family, and it is cheaper and more delicious than pork

1. Chives can also be replaced with green onions and onions
