How to make home-cooked stew
Ingredients: Half a pound of pork belly, 1 potato, 1 green pepper, 1 carrot, 1 handful of wide vermicelli.
Ingredients: 10 grams of green onions, 5 grams of garlic, 2 grams of ginger, 1 gram of dark soy sauce, 5 grams of light soy sauce, 2 grams of cooking wine, 2 grams of sesame oil, a little vinegar, salt and oil.
For the first step, it is recommended to peel and cut the potatoes and carrots into cubes, which will easily simmer if sliced. Remove the seeds, wash and cut the peppers, soak the wide vermicelli in hot water to soften, and then stew it again, so you don't need to soak it too softly. Wash the pork belly and cut it into thick slices, slice the green onions and ginger separately, slice half of the garlic and half of the minced garlic.
The second step, after the ingredients are processed, turn on the fire to heat the oil pan, pour a small amount of oil to heat, put in the pork belly slices and stir-fry over medium heat, fry out a part of the fat, put in half of the green onion slices, ginger slices, garlic slices and fry the fragrance, pour in cooking wine, 1/3 of the light soy sauce and fry until the meat slices are colored, turn off the heat and serve it for later use.
The third step, pour an appropriate amount of oil into the bottom of the pot, turn on high heat and heat it, pour in potato and carrot pieces and stir well, put in the remaining green onion slices, ginger slices, garlic slices, light soy sauce and stir-fry for 1 minute, stir back and forth when stirring, which can prevent the potatoes from sticking to the pan, and then pour in the meat slices and stir well.
The fourth step is to add hot water that can be 1 cm high to the pot, bring to a boil over high heat, put in dark soy sauce, stir well with a little aged vinegar, cover the pot and turn to low heat and simmer for 20 minutes.
Step 5: Then put the wide vermicelli into the pot, press it into the soup, and continue to simmer for about 8 minutes, waiting for the potatoes and carrots to be soft and glutinous, and then the vermicelli will be cooked.
Step 6, put in the green pepper and stew for 2 minutes, sprinkle in minced garlic, add sesame oil, and an appropriate amount of salt to taste, stir well, turn off the heat, get out of the pot and put out the stewed stewed vegetables and it is ready, the final minced garlic and sesame oil must be put in, very fragrant.
The pork belly will have a better flavor when stir-fried, and the flavor of the soup will be stronger during the stewing process, so you can stir-fry it before simmering it with other ingredients.
Because in stewing, the vermicelli will absorb a lot of soup, when we add water, try to pour as much as possible, 1 to 2 cm above the ingredients, so that the stew will not quickly dry the soup, and the vermicelli will not lump.
It is okay to put the green pepper in the pot before the dish is stewed, because it is easy to cook, and if it is put in the pot too early, it will affect the flavor direction of the whole dish, and it will become too soft and rotten.
