【Stir-fried yam with fungus】
Ingredients: 200g yam, 3g black fungus, oil, half a red pepper, 1g salt, a little chicken essence
Steps:
1. Pour an appropriate amount of white vinegar into the water and stir well
2. Peel the yam and cut it into thin slices and soak it in vinegar water for 10 minutes to prevent the yam from oxidizing and turning black
3. Blanch the yam tablets in boiling water for 2 minutes, remove and drain
4. Wash the fungus after soaking
5. Cut the red pepper into cutter pieces
6. Heat the oil in the pan, add the fungus and stir-fry for a while
7. Add the red pepper and stir-fry for a while
8. Add yam slices and stir-fry for half a minute

Tips:
After peeling and cutting the yam, soak it in white vinegar water, which can effectively isolate the air and prevent oxidation, so that after treatment, the yam will not turn black
