Ingredient Preparation:

500 grams of garlic, 180 grams of dried fragrant, 3 spicy millet, 2 tsp light soy sauce, 1 tsp salt

Cooking method:

1. The root of garlic is a little dirty, so cut off a small part of the root, clean it again, and cut it into small pieces three or four centimeters long after controlling the water for later use. In addition, because the stems and leaves of garlic are in different orders, the roots and leaves should be separated as much as possible.

2. Then cut the dried millet into strips for later use, cut the millet spicy into granules, and replace it with dried chili peppers if there is no millet spicy.

The dried beans I bought have no salty taste, which is equivalent to colored dried tofu, according to friends, this kind of dried fragrant bean is also called dried soy sauce in some places, and it is also called dried tofu, which may be called differently in different regions.

3. Heat the oil in a pan, boil until it is 60% hot, add the millet and stir-fry until fragrant. Because it was winter, I only put 3 chili peppers so as not to catch fire.

4. Then pour in the dried incense strips and stir-fry on high heat for about 1 minute.

5. Since the root of garlic is slower than the leaf, then pour in the garlic root, salt, chicken essence, light soy sauce and other ingredients into the pot and stir-fry for 1 minute. Whether you want to put chicken essence and light soy sauce or not is up to your preference.

   

6. Fry the garlic root until it is slightly soft, then pour in the garlic leaves and stir-fry for 1 minute, stir-fry until soft and flavorful, then turn off the heat and put on a plate.

Tips:

Because the garlic is more tender and contains more water, it is easy to get out of the water when the garlic is fried. If you feel that it is too easy to get out of the water, you can wash the garlic in advance, control the moisture and then fry it in the pot, but I think that if there is more water, it means that the garlic is more delicious.
