Homemade sauerkraut fish

Ingredients: grass carp, sauerkraut, pickled pepper, ginger slices, garlic cloves, starch, egg whites, cooking wine, salt, chicken essence, sugar, white pepper, clear soup.

Wash the killed fish, slice the fish skin side down, slice it obliquely into a fillet about half a centimeter thick, and chop the fish steak into pieces. Wash the sauerkraut, drain it with water, cut it into pieces and set aside. Add cooking wine, starch, egg white, salt to the fish fillet, mix well and marinate for 15 minutes.

Heat an appropriate amount of oil in a wok, add ginger slices, garlic slices, and pickled peppers and stir-fry until fragrant, add the chopped sauerkraut and stir-fry for a few minutes. Then add an appropriate amount of clear broth to boil, then add the fish steak and cook for 10 minutes to bring out the umami.

Put the sauerkraut into a bowl and set aside, leave the sauerkraut soup in the pot, put the pickled fish slices into the soup one by one, scatter them with chopsticks, wait for the fish slices to change color, season with salt, sugar, chicken essence and pepper, put them out in a deep dish, and pour a little pepper oil on the fish fillets.

Sauerkraut fat sausage

Ingredients: pork intestine, sauerkraut, ginger, garlic, pepper, rice wine, salt to taste, corn starch, cooking oil.

The large intestine is repeatedly scrubbed with salt and cornstarch. Soak the sauerkraut in water, then cut it into small pieces and wring it out. Add water to a pot and bring to a boil, blanch the large intestine, and then cut into sections.

Heat the pot with an appropriate amount of oil, stir-fry the ginger and garlic, and stir-fry in the large intestine for a short while. Boil the rice wine along the edge of the pot, add the sauerkraut and stir-fry evenly. Add salt and pepper to taste.

Blanch the large intestine for too long, start the pot as soon as the water boils, and do not blanch it completely. After entering the pot, the stir-fry time should not be too long, a slight shrinkage is enough, and the sauerkraut must be wrung out of water before entering the pot. The thicker part of the large intestine can be cut in half.

Homemade spicy chicken gizzards

Remove the gizzard and cut into slices. Take a small bowl and add an appropriate amount of chili and pepper noodles, an appropriate amount of salt, chicken essence, and green onions.

Put oil in the pan and turn off the heat until it starts to smoke slightly. Pour the oil onto the pepper flakes. Take an appropriate amount of chili oil, pour it over the chicken gizzard and mix well.
