The amount of sugar increases or decreases according to personal taste, and the warm water can be replaced with pure milk, so that it is a milky rice cake.
3. Put it in a food processor or wall breaker, whip into rice cereal, and pour into a bowl. Cover with a sheet of plastic wrap and let it start to ferment. You can use a soymilk machine or something like that, and you can add rice cereal. Judging the consistency of rice cereal, scoop up a spoonful of batter, and when it drips, it is in a state of uninterrupted running water.
4. Now that the weather is cold, I put it in warm water to ferment for about an hour. The fermented state is that the surface is full of bubbles, and the inside is also pitted and pores, which means that the fermentation is good.
5. Stir the leavened batter to exhaust the air. Prepare some paper cup molds, large bowls can also be used. Scoop into a paper cup and 7 minutes full is fine.
6. Put it in a pot and let it brew for about 10 minutes. Cover and steam on high heat for 20 minutes. Simmer for 3 minutes before opening the lid. If you use a bowl to steam, you need to steam for a longer time because the bowl is thicker.
7. You can demold it when you put it out of the pot without burning your hands, and it is best to eat it when it is warm.
Tips:
1. The amount of sugar increases or decreases according to personal taste, and if you like to eat sweet, you can add more sugar; Warm water can be swapped for an equal amount of milk.
2. The fermentation time is not fixed, according to the state of the batter, see that the surface is full of bubbles, and there are pores inside, indicating that the fermentation is good. If it is not fermented and steamed, it will not be fluffy.
