1. Fried poached eggs : Pour oil into a frying pan, fry the eggs after heating, add the eggs, fry until golden brown on both sides.

1. Handling the ingredients : Cut the eggplant and then cut it with a cross knife, then cut it into strips.
Cut the tomatoes with a cross knife and soak them in hot water to peel them.
Peel off the skin and dice the tomato with a knife.
2. Stir-fry the sauce : Stir-fry the chives, ginger and garlic in a frying pan, then add the diced tomatoes.

Tips:
First, which noodles to choose?
Both dry and fresh noodles are fine. However, in terms of simmering time, it takes 6-7 minutes for dry noodles and about 4 minutes for fresh noodles.
Second, how much water needs to be added?
After the ingredients of the braised noodles are seasoned, add water until the water level of the ingredients is almost submerged, and after boiling, the amount of water will be reduced, and then the noodles can be spread on top.
On the other hand, dry noodles require a little more water than fresh noodles.
