Garlic pig's trotters
Ingredients: pig's trotters, ginger, garlic, chives, dried red peppers, spices (4 bay leaves, 2 galangal, 2 cardamom, 2 angelica angelica, 2 star anise, 1 cinnamon)
Seasoning: salt, white wine, 300 grams of maltose, 1 teaspoon of chicken essence, 1 tablespoon of oyster sauce
Steps:
1: Use a spray gun or a small musket to burn off the fine hair on the skin of the pig's trotters, and the feet must be burned carefully. After boiling, put it in a large basin with warm water, soak the pig's trotters in warm water for 10 minutes, and scrape off the dirt from the skin of the pig's trotters with a knife under running water. After washing and scrubbing, cut into large pieces and put them in a basin with water (the water should be over the pig's trotters), add 50 grams of white wine, and soak for half an hour for later use.
2: Half an hour later, take out the pig's trotters and put them in a clean pot, slice the ginger, add cold water (the water should be over the pig's trotters) and boil, remove the foam while cooking, until there is no foam, take out the pig's trotters, rinse with water and set aside.
3: Soak the spices in boiling water for 3 minutes and drain, heat the pot and put a small amount of oil, stir-fry until fragrant, add cold water, add an appropriate amount of salt, pour in maltose (be lazy, color with maltose), put in the pig's trotters (the water should be submerged in the pig's trotters), boil over high heat, cook over low heat, about 50 minutes, the pig's trotters will be soft and glutinous, take out and put them in a clean basin.
4: Put half a bowl of boiled pork trotters soup in a vegetable bowl for later use, mince the garlic and dried red pepper in a bowl while the pork trotters are boiling, and chop the chives to set aside.
5: Heat the pot and put the oil, pour the garlic and chili in the bowl when the oil temperature is 80% hot, then add the soup to it, add salt, oyster sauce, chicken essence, chopped green onion and sesame oil to taste.
6: Pour the prepared soup over the pig's trotters.

Tips:
1: The pig's trotters bought back should be burned with fire, which can burn off the fine hair and remove the fishy smell of the pig's trotters.
2: Soak the trotters in warm water for 10 minutes to make it easier to clean.
3: When boiling pig's trotters, use low heat, so that the fragrance of spices can slowly soak into it, and the boiled pig's trotters are more fragrant and soft and glutinous.
