Squid three threads
Ingredients: 2 dried squid, 3 red peppers, a handful of leeks, 1 yuan of fatty meat
Seasoning: salt, soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of chicken essence, sesame oil
Steps:
1: Soak the dried squid in water for 4 hours.
2: Cut the squid from the middle after soaking until soft, then cut it into thin strips and put it in a clean dish, cut the red pepper into shreds, wash the leeks and cut them into 1 inch long sections, peel and shred the fat meat and put it on a plate for later use.
3: After the pot is cleaned, put hot water, after the water boils, blanch the shredded squid in the water, remove and drain for later use.
4: Heat the oil in a pan, put an appropriate amount of oil, add the shredded fatty meat, fry the shredded meat with oil, and add the shredded squid into the pot. Stir-fry for a while, add a little salt, soy sauce, a small bowl of water, and simmer over medium heat for 2 minutes.
5:2 minutes later, add the red pepper, oyster sauce and chicken essence and stir in.
6: When the soup is thickened, add the leeks and stir quickly.
7: After mixing well, add a few drops of sesame oil and remove from the pan immediately.
Tips:
1: The dried squid must be soaked in water to soften, so that the squid is not dry.
2: It is recommended to blanch the squid, blanching can remove the peculiar smell of the squid.
3: Stir-fry shredded squid in oil made from shredded fatty meat, which makes the taste richer and more fragrant.
4: When frying the shredded squid, add some water to simmer, the soup is thick and the juice is thick, and the squid is more fragrant.
