 How it works:

1. Slice the pumpkin, steam it in a pot for 15 minutes, mash it into a puree and set aside.


2. Take an appropriate amount of flour, add 1 tablespoon of salt, pour in the pumpkin puree, stir well, knead into a slightly harder dough, cover the lid and let the dough rise.

(I didn't weigh it here, but I felt a lot of it, just using pumpkin puree and noodles.) If the dough is a little dry, you can add a little water many times, and if it is a little wet, add a little flour several times and knead it into a slightly harder dough. )



3. Add an appropriate amount of chopped shiitake mushrooms, minced ginger, chopped green onion to the ground meat, add an appropriate amount of salt, chicken essence, light soy sauce, dark soy sauce, lemon juice or cooking wine, and then add an egg, stir well and set aside.

(Cooking wine can be substituted without lemon)



3. Knead the dough a few times after waking up, roll it out into a large dough, and the thickness of the dumpling skin can be OK, and it will be evenly divided into pieces like in the picture.

(If you don't like square shapes, you can also make small squeezes and roll them into round dumpling wrappers.) )





4. Put in the filling and wrap it into the shape you like.


5. Add an appropriate amount of water to the pot, add 1 tablespoon of salt, boil the water, put it in and cook.

(Add salt to prevent the dumpling wrappers from boiling)


6. Let's prepare some sauce: add an appropriate amount of salt, chicken essence, light soy sauce, sesame oil, balsamic vinegar, coriander, seaweed to a large bowl, and then add a few spoonfuls of boiling soup. Put the boiled dumplings in a bowl and eat.

(If you like to eat dried shrimp, you can also put dried shrimp, and if you don't like to eat dumplings, you can also take it out and dip it in your favorite sauce to eat.) )
