This tofu method has become popular in the circle of friends, with a unique flavor and a thief's meal, and it is enough to eat for 2 months at a time




Many people say that tofu is more difficult to make, but in fact, after reading my tofu recipe, I believe you will be able to make it in one go, not as difficult as you think.                                                                          


Preparation of spicy red oil fermented bean curd

Ingredients: 1 pound of old tofu, 1 handful of Sichuan pepper, half a bowl of chili noodles, 3 spoons of salt, 1 spoon of liquor

Method: 1. Prepare old tofu, Sichuan pepper, chili noodles, salt, liquor and other ingredients, and choose the best old tofu for tofu, and the tofu that is not old or tender can also be. Tender tofu contains a lot of water, so it will be difficult to form after fermentation, so I don't recommend using soft tofu.

2. Put the old tofu in the pot and steam it for 4 minutes and let it cool to have an anti-virus effect. Although some people say that this step can be omitted, I think it is more reassuring to steam it.

3. Next, prepare clean straw or sun-dried corn husks, but if you don't have these things, you can just use a bamboo plaque like me. Then cut the cooled tofu into small squares of three or four centimeters, the squares should not be too large, and then neatly stacked on the bamboo plaque.

Be careful, leave a little space between each piece of tofu, because the fermented tofu still needs to be pickled with chopsticks.

4. Then cover it with a piece of paper and let it start to ferment naturally, which is what it looks like on the 3rd day of fermentation, and there is already a faint layer of slimy things on the surface.

5. On the fourth day, there are some scarce white hairs on the surface, which is a biological fungus that is beneficial to the human body, it is a normal mycelial growth, and it is also the effect we want to achieve, the more white hairs grow, the better, so don't worry.

6. Some people also say that their tofu does not have white hairs, and there is only a layer of yellow things like latex on the surface, which is also normal, and the more such slimy things, the better. It doesn't have much effect if it's a little black hair, it's caused by too long a fermentation time, as long as the black hair isn't too much, it's fine.

7. Prepare chili noodles, peppercorns and salt, fry them in a pot in advance until fragrant, and then crush them with a rolling pin. Put the three ingredients in a bowl and mix well.

8. Wrap the fermented tofu cubes with chopsticks and evenly coat the chili noodles.

9. Prepare a clean glass bottle or small jar sterilized with boiling water, and evenly place the tofu cubes wrapped in chili noodles in the bottle.

10. Pour in the liquor first, then pour in the hot chili oil, do not cover the lid, cover the bottle with a clean plastic sheet, and ferment for half a month before eating.

The finished product is like this, this kind of fermented bean curd method is relatively common and easy to learn.

There is also a method of red oil and spicy bean curd, that is, after fermenting the tofu cubes, then put the bean curd into a bottle, put in chili noodles, fried peppercorns, and then pour in red oil and chili seeds, and finally pour in boiled salt water, ferment for two weeks, and then it can be eaten.
