【Cooking method】
The first step is to choose fresh tofu and steam it for 3-5 minutes, this step is mainly to reduce the beany smell of tofu, you can also cut the tofu into small pieces and blanch it, which can also reduce the beany smell.
The second step is to cut the steamed tofu into slightly thicker cubes after it is not hot. The thickness of the tofu cube is about 1 cm, but if it is cut too thin, the tofu will easily rot during the cooking process.
Step 3: Cut the green onion into small pieces and cut them into thick slices. For those who like spicy food, you can prepare a few dried chili peppers and cut them into sections.
Step 4: Heat the pot and pour the oil, first put the tofu cubes into the pot, fry over low heat until golden brown on both sides, and set aside.
Step 5: Leave oil at the bottom of the pot, add chopped green onions and chili peppers and stir-fry, and then pour the fried tofu cubes into the pot and continue to stir-fry.
Step 6: Release light soy sauce, oyster sauce and sugar to season and stir-fry evenly, my general seasoning ratio is 2 spoons of light soy sauce, 1 spoon of oyster sauce, half a spoon of sugar, if the amount of dishes is large, you can increase the condiments appropriately.
Step 7: Add half a bowl of water, bring to a boil over high heat to medium-low heat, cover the pot, and cook for 3-5 minutes. The amount of water does not need to be hidden from the tofu.
Step 8: Boil for about 3-5 minutes, remove the lid and put in the remaining green onions, sprinkle a little pepper, turn to medium and high heat and stir-fry until the green onions are fragrant, then turn off the heat and remove from the pot, add salt and wine. If you like the soup to be thicker, you can pour an appropriate amount of water starch into the pot and accept the soup.

1. After frying tofu, the tofu will be more flavorful when burning/simmering.
2. For friends who don't care much about the smell of beans, you can skip the first step and start the operation directly in the second step.
3. Roasted tofu with green onion is a Lu dish, which was originally not put in chili peppers, adding chili peppers is purely a personal preference, and you can omit chili peppers if you don't like them.
