Ingredients: 2 rolls of vermicelli, 2 eggs, a handful of shallots, 1 coriander, 3 cloves of garlic, 1 carrot, 1 tablespoon of light soy sauce, 1/2 tablespoon of oyster sauce, salt, cooking oil

The steps are as follows:

Step 1: Prepare the ingredients, 2 handfuls of vermicelli and 2 eggs are needed for one plate.


Step 2: Blanch the vermicelli with boiling water to soak.


Step 3: Pass the soaked vermicelli through cold water to avoid sticking together.

Tips:

First: Don't soak the vermicelli for too long, otherwise it won't taste good when it is soaked and fried, and it will be easy to stick to the pan.

Second: After soaking the vermicelli in cold water, it will not stick together when preparing for stir-frying.

Third: If you don't want the eggs to absorb too much oil when scrambling eggs, add some water to beat the egg liquid, so that the scrambled eggs are tender and do not absorb oil.
