Main ingredients: 370 grams of high-gluten flour, 1 egg (no less than 60 grams in shell), 85 grams of yogurt, 110 grams of milk, 4 grams of salt, 45 grams of caster sugar, 4 grams of high-sugar resistant yeast, 38 grams of unsalted butter, 8 hot dog sausages (need to be cut in half)

Excipients: 1 egg, 10 grams of water, appropriate amount of chopped green onion, appropriate amount of salad dressing, appropriate amount of tomato sauce, appropriate amount of white sesame seeds

1. Pour high-gluten flour, eggs, yogurt, milk, salt, caster sugar, and high-sugar resistant yeast into the chef's machine noodle bucket, if your room temperature is lower than 15 degrees, the milk needs to use warm milk, which can activate the activity of yeast and facilitate fermentation. Then stir on Variable 2 for 1 minute, then turn to Variable 4 and blend for 13 minutes


2. After 13 minutes, add the softened unsalted butter and continue to stir on Variable 4. Now that the weather is cold, it is recommended that the butter be taken out one night in advance and softened at a moderate temperature


3. When the butter is completely absorbed by the dough, it is necessary to stop every 3 minutes or so to check the condition of the dough film, as long as the dough can pull out the hand film, you can stop stirring.


4. Knead the dough, evenly divide it into 16 equal parts, knead it round one by one, cover it with plastic wrap, and relax for 15 minutes


5. After 15 minutes, take a small loose dough and knead it into a droplet shape, as shown in the figure below


6. Then roll it out with a rolling pin, and the state after rolling it out is also narrow at the top and wide at the bottom, and put half a hot dog intestine on the wide part


7. Then roll it up from top to bottom, and roll it slightly tighter when rolling. In addition, it is recommended to roll the dough sheet longer, so that the more circles you roll up, the better the organization of the finished product


8. After all the rolls are rolled, put them in the baking tray, the baking tray needs to be coated with softened butter in advance to prevent sticking, or oil paper can also be used. In addition, the size of the baking tray used today is 28cmx28cm, which you can refer to when you make it


9. Send it to the middle layer of the oven, put a bowl of warm water in the oven, close the door, select the fermentation file, and ferment to twice the size


10. During the fermentation period, we will prepare the lower surface brush, pour 1 egg and 10 grams of water into the bowl, and beat evenly. The reason why water is added is to prevent the color from being too dark


11. Take out the bread after it has risen (at this time, the oven is preheated to 160 degrees), brush with egg mixture, then sprinkle with white sesame seeds, then squeeze on salad dressing and tomatoes, and then sprinkle with chopped green onions


12. Finally, send it to the middle layer of the preheated oven, bake at 160 degrees for 30 minutes, and you need to observe the bread coloring situation halfway


13. The baked bread needs to be demolded immediately and put on the grill to cool, you can also spread some butter on the surface when the bread is just baked, and the bread crust will look better after absorbing the butter, and the taste will be more fragrant. However, butter must be applied while it is hot, and if the bread is cold before applying, the crust of the bread will not be absorbed

Tips:

1. If you have floor heating in your home and the temperature is very high, then you need to use refrigerated milk for milk, which can prevent yeast from fermenting in advance, on the contrary, if the temperature of your home is lower than 15 degrees, then you need to use warm milk to knead the dough.

2. The amount of milk in the formula is not absolute, because the water absorption rate of different brands of flour is different, so when you make it for the first time, you can pour more than half of the milk first, and then increase or decrease it according to the water absorption of the flour.

3. The yeast used to make steamed buns on the market cannot be used to make this bread, because that yeast is not resistant to high sugar, and even if it is used, it will not ferment successfully.

4. The finished product is eaten in 3 days, after all, there are no preservatives added to the finished product, so the shelf life is not long

5. Yogurt can not be substituted or reduced, because it is the secret to making the bread tissue soft, and yogurt must be thick and thick.
