Steps:
1. Wash the lettuce leaves and soak them in lightly salted water for 5 minutes. Boil water in a pot and blanch the lettuce leaves to remove the oxalic acid.
2. Blanch the lettuce leaves to cool to room temperature, take the soft and rotten leaves, cut them into finely chopped vegetable puree with a knife and put them in a bowl for later use, and cut the other part into sections with a knife, put them in a food processor and crush them into a paste and pour them out for later use.
3. Take two large bowls respectively, put 300 grams of flour in each, add a little salt to increase gluten. One part with lettuce paste and noodles, one with lettuce vegetable paste and noodles, when mixing noodles, lettuce paste should be added a small amount and many times, otherwise the hardness is not easy to master. Wait until it is stirred into a large dough, then knead it into a soft dough, brush the surface with cooking oil to lock in moisture, cover and leave the dough for 10 minutes.
4. Put the good dough on the board, knead and exhaust, then roll into long strips and cut into small noodles of uniform size, then take a small flour agent, constantly flip and knead inward, and arrange it into the shape of a small steamed bun, then prepare a large plate, brush the cooking oil at the bottom of the plate, and then put all the small flour agent on the plate, brush the edible oil on the surface of each flour agent, cover it with plastic wrap and let it relax for 20 minutes, the longer the relaxation time, the easier it is to roll out the flour agent.
5. Wipe some edible oil on the board to prevent sticking, then take out 2 dough agents and press it flat by hand, and then overlap the two dough agents together, and gently roll out a thin dough cake with a rolling pin, pay attention to the front and back sides to roll, roll out into a thickness of about 0.5 cm, when rolling, you should roll it out according to the size of the pot at home, do not roll out the cake blank is bigger than the pot.
6. Preheat the electric baking pan, without brushing the cooking oil, directly put it in the pan and cover it with a lid to fry.
7. Turn over one side when it is baked for 1 minute, at this time you can see that the bottom has shown a golden yellow pattern, and when both sides are golden brown, the middle of the cake can be slightly bulged out of the pot, and it takes about 3 minutes to bake.
8. After removing from the pan, uncover the cake while it is hot and divide it into two, and two cakes can be baked in 3 minutes. I made two kinds of cakes, one with visible textures and one all green. The two kinds of cakes are emerald green in color and have golden patterns on the outside, which are very beautiful and make people particularly appetizing to eat.
