The production process is as follows:
1. Prepare a medium round eggplant, plus a small handful of parsley.
2. Wash the eggplant, first cut off one end and one tail, and then change the knife to cut into thick strips. Finally, sprinkle some salt, mix well and marinate for about 15 minutes. After the eggplant has been marinated, squeeze out the excess water vigorously.
3. Handle the coriander and cut it into small pieces; Prepare enough garlic, peel and cut into small pieces; Finally, cut a little green onion and take two star anise for later use.
4. Pour an appropriate amount of cooking oil into the pot, and when the oil temperature is 6 hot, pour the eggplant into the pot and fry until soft.
5. Remove the eggplant oil control and set aside; Take an empty bowl, put a large spoonful of sweet noodle sauce in the bowl, add some white sugar, and finally mix the noodle sauce with an appropriate amount of water to form a thin paste.
6. Pour a little cooking oil into the pot, first put the garlic, green onions, and star anise into the pot to fry the fragrance, and then pour the prepared noodle sauce into the pot and boil for a while until you smell the fragrance.
7. Pour the eggplant into the pan, add a little light soy sauce and mix well.
8. Finally, add an appropriate amount of chicken essence to the pot, then pour in the chopped coriander, and stir-fry evenly.
