Prepare ingredients: 2 pig's trotters, 1 green onion, a small piece of ginger, spices (star anise, Sichuan pepper, cumin, bay leaf, cinnamon, angelica, dried chili, yellow gardenia, red yeast rice), appropriate amount of salt, 20 grams of rock sugar, appropriate amount of light soy sauce, appropriate amount of dark soy sauce, a little cooking wine.
Steps:
1. Add an appropriate amount of water to the pot, put the fresh pig's trotters in a pot under cold water, add a little cooking wine after boiling over high heat, continue to cook for 2-3 minutes, and then remove it.
2. Blanch the pig's trotters and remove them, rinse off the residual foam on the surface with water, then clean the remaining hair on the surface of the pig's trotters, and cut the surface of the pig's trotters with a kitchen knife to make them taste faster during the marinating process.
3. Cut the green onion into green onion segments, cut the ginger into slices, and rinse the other spices with water to control the moisture and set aside.
4. Add an appropriate amount of water to the pressure cooker, put all the spices into the pot after the water boils, then add an appropriate amount of salt, light soy sauce, dark soy sauce, chicken powder and a little cooking wine, and keep the heat high for 2 minutes. The taste of the braised soup should be slightly salty.
5. Add a little cooking oil to the pot to moisten the pot, then add 20 grams of rock sugar to fry the sugar color, stir the rock sugar with a spoon after stir-frying, fry until the big bubbles become dense bubbles, then add an appropriate amount of boiling water, and keep boiling for 2-3 minutes after boiling.
6. Pour the fried sugar into the pressure cooker, then put the cleaned pig's trotters into the pressure cooker, cover the lid, start the timer after the pressure cooker is steamed, and press on high heat for 20 minutes.
7. Wait for the pressure cooker to naturally relieve the pressure, let the pig's trotters simmer in the pressure cooker for about 2 hours and then take it out.
