【Northeast spicy tofu】

Ingredients: 1 piece of tofu, 1 tablespoon of ground chili, appropriate amount of oil and salt, 1 section of green onion, 2 slices of ginger, 3 cloves of garlic, 1 teaspoon of chicken essence, 2 tablespoons of light soy sauce, appropriate amount of water starch,

Steps:

1. Choose a more tender tofu and cut the tofu into 1.5 cm square pieces.

2. Finely chop the green onion, mince the ginger, pat the garlic, then chop it into minced pieces, put half of the chopped green onion and minced garlic in a bowl, add 2-3 tablespoons of water and soak it.

3. Add water to the pot and bring to a boil, blanch the tofu cubes, boil for 2-3 minutes after the water boils, blanch the tofu, you can remove the beany smell of the tofu.

4. Pour out the tofu and the water from the blanched tofu together and pour it into a large bowl for later use.

5. Add oil to the pot and heat it, add chopped green onions, ginger and chili peppers to stir-fry until fragrant, be careful not to fry the chili peppers, the chili peppers are fried and have a bitter taste.

6. Pour in 1 bowl of water, then add light soy sauce and dark soy sauce, chicken essence, salt, and bring to a boil.

7. Remove the tofu, drain the water, put it in the pot, bring to a boil, and cook for 2-3 minutes to taste.

8. Pour in water starch to thicken, heat over high heat until the soup becomes viscous, add the soaked onion and garlic water, heat for a while, turn off the heat, put it out, and a plate of delicious Northeast spicy tofu is ready.

Tips:

Tofu is more tender tofu, tofu is more tender, when firing, tofu should keep a complete shape, do not stir-fry tofu, easy to break, shake the wok. This dish tastes better with a little more soup.
