Wuxi sweet and sour pork ribs
Ingredients: 500g pork ribs, 1 star anise, 3 slices of ginger, 15g of aged vinegar, 10g of dark soy sauce, 40g of sugar, 10g of cooking wine, 5g of salt, 1 green onion, 10g of light soy sauce, 15g of lard, 10g of vinegar.
Cooking Steps:
Step 1: Clean the pork ribs and cut them into small pieces for later use.
Step 2: Preparation: Tie the green onion into a knot and cut the ginger into slices for later use.
Step 3: Heat the oil, add the ginger slices when the oil is hot, and stir-fry until fragrant. Add the rinsed ribs and stir in the oil until browned.
Step 4: After the pork ribs change color, put in the steamed hot water that has not passed the pork ribs, then add dark soy sauce, vinegar, cooking wine, sugar, star anise, and green onion knots. After the water is boiling, continue to cover and simmer.
Step 5: Remove the ribs when they are exposed and set aside, leaving some of the soup in the pot for later use.
Step 6: In another pot, add lard and sugar, turn to low heat and stir constantly to prevent the batter, boil the sugar and melt the color thoroughly, and pour in the pork ribs.
Step 7: Stir-fry until the ribs are evenly coated with sugar juice, then pour in a spoonful of vinegar to taste, stir-fry until the color is even.
Tips:
1. It is best to choose a net rib with less fat, and the size should be even, so that the ripening time is just right.
2. Sweet and sour pork ribs pay attention to the aroma of meat and rotten bones, so do not blanch the net ribs, otherwise the fragrance of the ribs will be lost.
3. When boiling the ribs, add vinegar to be able to stew the ribs better, so that the ribs are soft and rotten without affecting the taste.
4. Because sweet and sour pork ribs are sweet and sour, add vinegar before stir-frying the sugar and pour a little seasoning along the edge of the pot.
