Ingredients for the dough: 800 grams of flour, 5 grams of yeast, 5 grams of salt, 2 tablespoons of oil, warm water

Filling ingredients: 600 grams of zucchini, 400 grams of meat puree

Make:

1. Add 800 grams of flour to 5 grams of yeast powder and 5 grams of salt and mix well, then pour in warm water (the amount of water is about 65% of flour) and mix well, then pour some oil about 1-2 tablespoons, continue to mix with a spatula, like this wet and soft dough is OK, cover with plastic wrap, and place it in a warm place to ferment.

Note: You can also gently knead twice with your hands and the dough will be smoother


2. When the dough is made, we will prepare the filling, add salt, sugar, light soy sauce, dark soy sauce, oyster sauce, pepper, thirteen spices, egg liquid, shallots and ginger to the meat puree and mix well and set aside.

Special reminder: Don't draw water in the meat, because this is a vegetable meat filling, and the dish uses zucchini, and the zucchini will come out of the water when it encounters salt.

3. Rub the zucchini with oil and mix evenly, do not put salt at this time, and mix the zucchini with the meat filling until it is to be wrapped to prevent too much water.



4. The fermented noodles are full of holes when they are pulled out, and now we can come to the pie.


5. Do not knead this dough, do not use dry powder, rub some oil on your hands, knead the dough into long strips, and divide it into small portions.

6. Take a portion and wrap it in the filling, and then press it flat, as thin as possible, but don't press hard, otherwise the skin will break, press and let it stand for a few minutes.



7. Pour some oil into a frying pan, heat it and add the oil zygotes.

8. Fry one side brown, turn over and fry the other side, keeping medium heat until brown and cooked through.

1. The dough is particularly wet and soft, which is the characteristic of oil zygotes. The ratio of flour to water is about 1:0.6-0.7.

2. The fermentation time can be long or short, depending on your schedule. It can be fermented for a long time at room temperature, and if you are in a hurry to eat, you can put it in a warm place to ferment.

3. Don't beat water in the meat, because the zucchini will come out of the water when it encounters salt, and mix the zucchini with the meat filling until it is to be wrapped to prevent too much water.

4. The oil zygotes sold outside are oily, especially burnt, if you don't want to eat too much oil, just put less oil like me to fry, the taste is not bad.
