 How to stir-fry diced mushroom meat

Ingredients: 450 grams of shiitake mushrooms, 200 grams of pork belly, 15 grams of green peppers.

Ingredients: 3 cloves of garlic, 1 and a half teaspoons of sweet noodle sauce, 1 teaspoon of oyster sauce, 2 teaspoons of light soy sauce, 1 teaspoon of cooking wine, a pinch of salt, appropriate amount of oil.


The first step, boil water in the pot first, break off the old stalk of the mushrooms, soak the mushroom cover in water for a short time, 5 minutes, so that it is cleaner, squeeze out the water after washing, cut into mushroom pieces, blanch the mushroom pieces for 2 minutes until half-cooked after the water boils, turn off the fire and take it out to cool.                                  


In the second step, wash the pork belly, cut into small cubes, shave the green peppers to remove the pepper seeds, wash and cut into small cubes, these two pieces are cut into about the size of mushroom pieces, and the garlic is peeled and minced. Squeeze out the cooled diced shiitake mushrooms and set aside the excess water to prevent water from coming out during frying and affecting the taste.


The third step is to heat the oil pan on the fire, pour an appropriate amount of oil and continue to burn until the oil temperature is four or five percent hot, pour in the diced meat and turn to low heat to stir-fry, fry the excess fat, pour in cooking wine and stir-fry for 3 minutes to remove the fishy, until the diced meat is golden brown, and then add the minced garlic to fry the garlic fragrance.


The fourth step, pour in the diced mushrooms and stir-fry well, add sweet noodle sauce, oyster sauce, light soy sauce, change to medium heat and stir-fry until the ingredients are colored, to fry the sauce aroma, you have to fry slowly over medium heat, about 3 minutes, not in a hurry, it is easy to paste the pot on high heat, and the ingredients are not delicious.


The fifth step, after the fragrance is fried in the pot, put the diced diced pepper into it and fry it well, change the heat to high and stir-fry for 1 minute, you can turn off the heat, taste the saltiness of the dish before coming out of the pot, add a little salt if the saltiness is not enough, and put the dish out of the pot.


Tips:

Blanching shiitake mushrooms can not only remove the earthy smell of mushroom ingredients, but also allow shiitake mushrooms to absorb water, so that they will not inhale too much oil when fried, otherwise it will taste too greasy, and the taste and texture will not be so good.

After adding sweet noodle sauce, oyster sauce, and light soy sauce, you need to pay attention to the heat, keep it below medium heat and fry it slowly.
