Yam has a high nutritional value, and home-cooked yam is generally boiled in soup or fried to eat.
Today, I use yam to make a delicious pasta dish for my family, and yam does this, which is more nutritionally comprehensive.
Here's how I made it:
1. Peel the yam, steam it in a pot and mash it into a puree.
2. Add 300 grams of flour, 15 grams of sugar, 3 grams of yeast to the warm yam puree, add a small amount of warm water many times, stir into a dough without dry flour, and knead it into a smooth dough with moderate softness and hardness.
(The water absorption rate of each flour is different, so water should be added in small quantities and many times.) )
3. Recently, the weather has been relatively cool, and we have been proofing up relatively quickly through warm water, and the water temperature can be controlled at about 35 degrees.
(The water temperature is not easy to be too high, and the yeast is easy to lose its activity.) )
4. Prepare some chopped purple potatoes and carrots to increase nutrition.
5. The volume of the dough is significantly expanded, and the inside is a honeycomb structure, which is ready.
6. Take out the dough without kneading, stretch it out, add chopped carrots and purple potatoes, and knead evenly.
7. Arrange the thick cakes into rectangles and cut them into long strips.
8. Rub each strip slightly evenly.
9. Put it in a steamer and let it rise for 15 minutes with warm water. Then turn on the high heat and steam for 20 minutes, turn off the heat and let's go for 3 minutes.
Sweet and fluffy, delicious and nutritious, yam does this, my family and friends like to eat it very much! If you like it, you can try it!
