Today I chose garlic moss, carrots and peanuts together to make a dish, and share it as follows:

Preparation of cold peanuts

Ingredients Required:

Peanuts, garlic, carrots, coriander

Salt, light soy sauce, rice vinegar, sugar, chicken essence, sesame oil

Sichuan peppercorns, star anise, cinnamon, bay leaves

1. Soak the peanuts overnight in advance, remove them and put them in the pot; Add salt, peppercorns, star anise, cinnamon, bay leaves and water over the ingredients. Bring to a boil on high heat, turn to medium heat, cover and cook for 15 minutes, turn off the heat, and simmer for 10 minutes with the lid on. Remove and set aside.

2. Cut the garlic moss into long sections and blanch them first:

Put water in a pot and add a pinch of salt. After the water boils, blanch the garlic moss for two minutes, remove and cool for later use.

Wash, peel and cut the carrots into small pieces, also blanching for two minutes.

3. Cut the blanched garlic moss into small pieces and cut the coriander into sections.

5. Mix a bowl of juice:

A pinch of salt, 2 tablespoons of light soy sauce, 3 tablespoons of rice vinegar, 1 tablespoon of sugar, 1 tablespoon of sesame oil, a little chicken essence, stir well.

6. After all the ingredients are processed, put them in a large bowl, pour in the prepared bowl juice, and stir well.

Serve on a plate.
