Step 5: Heat the oil in the pot, and when the oil temperature is 5 hot, you can put in the starchy yam strips. If it is a yam stick wrapped in starch batter, it is best to put it into the pot one by one so that it will not stick.

Step 6: Keep the heat on medium-low heat and fry slowly, just once. When the starch shell on the surface of the yam strips turns hard and yellow, you can take it out. If you want to eat something more chewy, you can increase the oil temperature and fry it for about 20-30 seconds.

Step 7: Leave a little base oil in the pot, pour in the fried yam strips, then pour in the seasoned sauce, turn on the high heat and quickly stir-fry evenly to reduce the juice. If it's a hospitality dish, you can garnish it with a little chopped green onion and you're ready to serve.
