2. Spicy tender tofu
1 handful of garlic and a small amount of lean meat in turn, mince and chop the red pepper. 2Cut a piece of fresh tofu into thin slices, place him on a plate in turn, and steam in a pot of boiling water for three minutes. 3. Put oil in the pot, add minced garlic and fry until fragrant, then add minced meat and fry until it changes color, add oil, soybean paste, and a little sugar. 4Pour in a small amount of water, simmer for five minutes, then add chicken essence and chili flakes and stir evenly out of the pot, pour it evenly on the steamed tofu, and sprinkle with chopped green onions.
3 sizzling tofu
1Cut the tofu into thick slices and coat with a layer of starch. 2Put oil in a pan, put the starched tofu into the pan and fry until golden brown on both sides, and set aside. 3. Leave the bottom oil in the pot, put the ginger and garlic into the pot and stir-fry until fragrant, and then pour in the fried tofu. Add light soy sauce, sugar, oil, cooking wine, appropriate amount of water, and cook the tofu soup over medium heat until thick. Add the chicken essence and stir-fry well, sprinkle with chopped green onions.
4. Stir-fry stuffed tofu
1 handful of shiitake mushrooms, cut the dried shrimp into small pieces, chop the lean meat and set aside. 2Put the pork, shiitake mushrooms, dried shrimp and minced ginger in a bowl, add an appropriate amount of light soy sauce, salt, chicken essence and pepper and stir the glue with chopsticks to make a meat filling for later use. 3Cut the tofu into rectangular pieces, and then use a knife to dig the tofu into a rectangular pit. Then pour in the seasoned minced meat. Preheat the 4 pots and add oil, fry the tofu with the meat filling side down until golden brown, turn it over and continue to fry, while adding an appropriate amount of oil, light soy sauce, sugar and water and simmer for 3 minutes. 5Put the tofu out of a bowl, add the remaining soup in the pot to the water starch and cook to thicken, then pour it on the tofu and sprinkle chopped green onions.
5. Braised tofu
1Cut the tofu into square slices and coat with a layer of egg wash. Chop the ginger and garlic into a puree, chop the lean meat, and slice the shiitake mushrooms. 2Put oil in a pan, put the tofu wrapped in egg wash into the pan and fry until golden brown on both sides, and set aside. 3. Stir-fry in another oil pan, add minced ginger and garlic and stir-fry until fragrant, then pour in minced meat and mushroom slices and stir-fry. Then pour in the fried tofu, pour in water, light soy sauce, oil, appropriate amount of sugar and chicken essence and stir-fry well. 4. Pour in the water starch and sprinkle with chopped green onions.
