Today, I used shiitake mushrooms, Shanghai greens, and tofu to make a vegetarian stuffed bun for my family, which is suitable for all ages, and my children also like to eat it!


Here's how I made it:

Add 10 grams of sugar and 3 grams of yeast to 1,150 ml of warm water and stir to dissolve.

Add a small amount to 300 grams of flour several times, stir into a batsting without dry flour, and knead into a smooth dough with moderate firmness and softness. Place in a warm place to leaven.


2. Add an appropriate amount of water and baking soda to the open basin of Shanghai green break, and soak for five minutes, so that the residual pesticides can be better removed, and then cleaned.


3. Put the washed Shanghai green into the pot, drop a few drops of cooking oil, and blanch for 30 seconds.

The purpose of dripping cooking oil is to keep the emerald green color of Shanghai green.


4. Drain and chop it up.


5. Wash the mushrooms and finely chop them.


6. Cut some chopped tofu, add an appropriate amount of oil to the pan, add the chopped tofu, fry over medium-low heat, and fry until golden brown.



7. Pour in the shiitake mushrooms and stir-fry evenly.


8. Put all the side dishes into a large bowl, add an appropriate amount of salt, light soy sauce, thirteen spices, sesame oil, chicken essence, and stir well. If you like to eat dried shrimp, you can put some dried shrimp.


9. The volume of the dough after waking up is significantly expanded, and the inside is a honeycomb structure.


10. Take out the dough and knead it for a while to exhaust.


11. Roll into long strips and divide evenly into pieces.



12. Knead out each piece of small dough evenly, roll it out until it is a little thicker than the dumpling skin, thick in the middle and thin on all sides. Add the filling and wrap it into your preferred shape.



13. Put it in a steamer and let it rise again for 15 minutes. Then turn on the heat and steam for 20 minutes, turn off the heat and simmer for another three minutes.
