1. Cut the tofu skin into thin strips, the tofu skin I bought is handmade, it is thicker, you can cut it into shreds first and then blanch, if the tofu skin is relatively thin, it is recommended to blanch it first and then shred, otherwise it will be easy to break; After washing the cucumber, cut it into shreds, I was lazy, and I directly used a grater to shred; Prepare a handful of vermicelli, soak it in warm water in advance to soften, don't soak it for too long, 10~20 minutes is fine; Wash the parsley and cut into sections; Peel the garlic and chop it into minced garlic

2. Add an appropriate amount of water to the pot, add a small spoon of salt after the water boils, and then blanch the cut tofu skin, blanching for about 30~40 seconds

3. Then take the vermicelli out of the warm water, blanch it with the water that has just blanched the tofu skin, blanch it for about 20 seconds, the vermicelli is easy to be soft and rotten if it is blanched for too long, so it will lose its smooth taste

4. After the tofu skin is cleaned of moisture, it is best to dry it by hand, put the minced garlic on the tofu skin, boil 2 tablespoons of corn oil in the pot, and pour it on the minced garlic when the oil is slightly smoking, so as to stimulate the aroma of garlic

5, then put the cucumber shreds, coriander, vermicelli into the tofu skin of the cooking pot, because the vermicelli is relatively long, you need to cut it into sections with scissors, so that it is more convenient to eat, and then start seasoning, add a product of fresh soy sauce, oyster sauce, salt and sugar in turn and mix evenly, and finally drop a few drops of sesame oil and stir evenly again

1. I'm lazy, cucumbers are shaved into shreds with a grater, in fact, if the knife work is better, it is best to cut them into shreds with a knife, and the method of cutting can retain more water from the cucumber, so that the taste is more crisp.
