【Braised eggplant】

Ingredients: eggplant, pork

Ingredients: green pepper, millet pepper, garlic, chopped green onion, starch, light soy sauce, dark soy sauce, sugar, cooking wine, bean paste

Steps:

Step 1: First, clean the eggplant, peel and cut it into strips, boil a pot of water, boil the water and put it in the eggplant to steam for 5 minutes.

Step 2: Finely chop the pork, mince the garlic and chopped green onion and set aside, cut the green pepper and millet pepper into rings for later use.

Step 3: Mix a bowl of sauce: add starch, light soy sauce, dark soy sauce, sugar, cooking wine, minced garlic, and an appropriate amount of water and stir evenly for later use.

Step 4: Pour an appropriate amount of oil into the hot pot, add the minced meat and stir-fry quickly until it changes color.

Step 5: Add a spoonful of bean paste and stir-fry evenly until red oil comes out.

Step 6: Add minced garlic, minced green onion, green pepper and millet pepper and stir-fry.

Step 7: Add the steamed eggplant and stir-fry evenly.

Step 8: Finally, add the seasoned sauce and stir-fry, and wait until the juice is slightly viscous before it comes out of the pot.
