Today, I share with you the stewed bean noodles that I have made for more than ten years, and the noodles are strong and non-sticky, fragrant and flavorful.
【Braised bean noodles】
Ingredients: 400 grams of beans, 500 grams of noodles, 100 grams of pork belly, star anise, green onions, ginger, garlic, salt, light soy sauce, aged vinegar, sesame oil, dark soy sauce.
Steps:
1. To make stewed noodles with beans, you can make hand-rolled noodles by yourself, or you can buy fresh noodles on the market, but no matter what kind of noodles you have, you must ensure that the noodles are not sticky, especially the hand-rolled noodles you make.
2. Rinse the beans with water first, and then break them into small sections, many friends like to break the beans into sections first and then wash the beans, so that it is difficult to wash the beans clean. To make stewed bean noodles, it is best to choose the king of beans or long beans, which have no gluten and are easy to cook.
3. Slice the pork belly, chop the green onions, and slice the ginger.
4. Add oil to the wok, add the pork belly slices and stir-fry the meat slices after the oil is hot, add chopped green onions, ginger slices and star anise to stir-fry until fragrant.
5. In a hurry, add the beans and stir-fry, add an appropriate amount of salt, light soy sauce, dark soy sauce to taste, and adjust the color, turn on high heat and stir-fry for 1 minute to bring out the fragrance of soy sauce.
6. Add boiling water that has not covered the beans, and then scoop out half a bowl of soup after the water boils.
7. Shake the prepared noodles, then spread them neatly on top of the beans, turn to medium heat, cover the pot and simmer for 5 minutes.
8. After 5 minutes, pour half of the scooped soup on the noodles, and pour the other side along the edge of the pot, after the noodles are wet by the soup, use chopsticks to disperse the noodles, so that the noodles are not easy to stick, and they will be more flavorful; Cover and simmer for another 5 minutes.
9. After the noodles are cooked, add a little minced garlic, a little vinegar, a little sesame oil, and then use chopsticks to completely stir the noodles and beans evenly.
Tips:
1. Beans are not easy to cook, so when making beans stewed noodles, you must control the time to ensure that the beans are fully cooked before eating.
2. After the noodles simmer for 5 minutes, pour half of the scooped soup on the noodles, which can effectively prevent sticking and make the noodles more flavorful.
3. Finally, adding minced garlic, sesame oil, and aged vinegar is the key to the deliciousness of bean stewed noodles, and it must not be missing.
