【Step 2】Blanch the pork belly in a pot under cold water, add ginger slices and 1 tablespoon of rice wine for 2 minutes, remove and clean.
【Step 3】Put the pork belly in the pan without oil, and slowly fry over low heat until the surface of the pork belly is browned and oily.
【Step 4】Add dried chili, cinnamon, star anise, bay leaves, ginger, a little sugar, and then pour in the seasoned sauce.
【Step 5】After stir-frying for a while, pour in the soaked dried bamboo shoots, add an appropriate amount of boiling water, and cover the ingredients.
【Step 6】Cook over medium heat for 50 minutes, when the braised pork is cooked, add a little salt, stir well, and simmer for another 5 minutes.
1. Be sure to use boiling water, because cold water will shrink the braised pork and affect the taste.
2. The dried bamboo shoots should be soaked in advance, otherwise it will be difficult to cook soft.
3. You can use a casserole or rice cooker, if you use an ordinary frying pan, you should pay a little attention to avoid sticking to the pan when frying the braised pork.
4. Water must be added at one time, and do not add water halfway.
