【Ingredients】

1 eggplant, 2 eggs, 1 ham, 2 shallots, 1/2 bowl of flour, 1 tablespoon salt, 1/2 tablespoon chicken broth mix, 1/2 tablespoon pepper

【Steps】

Prepare a nice large long eggplant, wash it and cut it into thick slices.



Dig out the middle heart, don't waste the heart and chop it for later use, this step should be faster to prevent the eggplant from oxidizing and turning black, you can also put the cut eggplant in water to prevent it from turning black.




In a bowl, add diced eggplant, diced ham (you can replace it with carrots if you don't like it), chopped green onions, and beat in 2 eggs.



Add flour, salt, pepper and chicken powder in small quantities to make a batter. Do not dilute the batter, otherwise it will easily flow out when it is baked.




Brush the pan with a little oil and add the eggplant rings.



Pour the batter in the middle of the eggplant ring and flatten it out, not too much batter to prevent it from flowing out.
