1. First of all, the frozen oxtail bone is soaked in clean water, one is that it can be quickly thawed, and the other is that it can be soaked in blood and water odor.
There is no fixed length of soaking, one hour, two hours can be, as long as it is thawed and soaked in bloody water, you can also change the water several times in the middle.
2. Next, pour out the blood, rinse it well, and replace it with clean water. Blanch the water in the pot, boil for a minute or two, and a large amount of blood will float, so be sure not to boil for a long time.
3. Blanching time We prepare the spices for the beef stew, and I generally use these ingredients as flavors: tomatoes, onions, dates, ginger, shallots, orange peel, bay leaves, star anise, cloves. Bayberry, star anise, cloves, if you don't have it, you can also use it.
4. Cut the tomatoes and onions into large pieces, pat the ginger and clean the rest.
Onions and tomatoes with beef are a perfect match, and these two ingredients must not be saved. Here, we use it as a spice, and they are very fresh.
Green onions, ginger and orange peel are all fishy things, especially the fragrance of orange peel, which can dissolve the oiliness of fatty meat.
The stew with a few jujubes does not need any sugar at all, the taste is very rich, and it is very original and healthy.
5. Pour out the dirty water from the blanched oxtailbone, clean the oxtail, and clean the pot.
6. Then put the blanched oxtail bones back into the electric pot, fry to dry the water, and then pour these spices we have prepared into it and stir-fry, the tomatoes can be left a small part of the last.
7. After the fragrance is fried, add one and a half spoons of dark soy sauce, wash the spoon with a little water, this little water is enough, because the electric pressure cooker does not consume water, and there is no need to pour water over the ingredients.
Then cover the pot and choose to pressurize for 25-30 minutes, after decompression, the meat is basically rotten, and you can poke it with chopsticks.
8. Next, add a little salt to taste, turn the meat over, then pour the potato cubes, carrot cubes, and the remaining tomatoes into the pan and spread them on top of the oxtail bone. Cover the pot tightly and press for another 5-10 minutes.
9. After the natural decompression, open the lid of the pot and flip it over, and see that the meat is very, very rotten, and the soup is red and bright, we don't fry any sugar color at all, this color comes from tomatoes and carrots.
10. Put it in a big bowl and serve it with rice, or just Damo, it's very, very good.
